Two weekend ago Abergavenny staged its now annual Food Festival, a fantastic gathering of chefs, cooks, writers, producers, farmers, foragers and quite simply anyone who enjoys good food. This event happens every September and is always worth a visit.
Gliffaes Head Chef, Karl Cheetham, gave two demonstations during the weekend, one of which we filmed. In this short piece you can see him making a starter of Black Mountain Smoked Duck and Chicken in Aspic with Celeriac Remoulade and Walnut Biscuits.
You can buy the lovely Smoked Duck and Chicken from Jo and Jonathan at Black Mountain Smokery in Crickhowell. They do mail order and their smoked food is perfect delivered by post.
