Karl’s Vegan Cheesecake Recipe

You would be forgiven for thinking that we are late to the Vegan way of life – far from it. Our Brecon restaurant can cater to a carnivorous, gluten free or vegetarian diet; we are also able to accommodate the vegan lifestyle in our kitchen and have done since long before the media called it a trend. Head Chef Karl went on a course earlier this year to brush up his skills and to honour Veganuary – see his recipe below.
To make our vegan Duo of Chocolate Cheesecake you will need:
Ingredients
Cheesecake Base:
15g vegan spread or coconut oil
40g vegan digestive biscuits
Agar Mix:
10g agar agar
300ml water
Dark Chocolate Cheesecake Mix:
115g oat cream
100g unrefined caster sugar
150g dark chocolate
225g cream cheese
112g agar agar mix
White Chocolate Cheesecake Mix:
115g oat cream
75g unrefined caster sugar
150g white chocolate
225g cream cheese
150g agar agar mix
Decoration
150g dark chocolate
150g white chocolate
Method
Cheesecake base
Melt the vegan spread in the microwave. Ground the biscuits in a food processor. With a rubber spatula, mix the melted spread and ground biscuits.
Using a pestle, or anything heavy, press the mix into the bottom of the glasses, 4-5 mm thick.
Keep in the fridge to allow to harden.
Agar Agar Mix
Dissolve the agar agar in the water. Bring to the boil whisking continuously, keep it boiling for another 20 seconds. Transfer to the fridge.
Chocolate Cheesecake Mixes
Separately, melt each type of chocolate in a microwave, 15 seconds at a time. Do not overheat.
Keep aside.
In a bowl, pour the oat cream, the sugar and cream cheese. Mix with an electric hand whisk until smooth consistency. This will form the beginning of the dark chocolate cheesecake mix.
Melt 112g of the agar agar mix in the microwave and add to the melted dark chocolate, give it a stir and slowly ass to the cheesecake mix. Again, whisk until smooth and silky consistency.
With a piping bag, pour the dark chocolate cheesecake mix into the glass, about 3 ½ cm thick. Transfer to the freezer and let it set for ½ hour.
Repeat the same operation with the white chocolate.
Decoration
Separately, slowly melt 150g of each chocolate in the microwave. With a spatula, spread each chocolate on an acetate film. Leave it to harden in the fridge for a few minutes, and cut some random shapes, as you wish.
